    In: 20 grams dry coffee
    Out: 330 grams brewing water
    Time: 2:30-2:45 minutes

    Background: 

    Our fifth time offering this coffee! This harvest, we went one step further to purchase a separate lot that has a more pronounced floral character. This is from one of our favourite farms in Guatemala. It is so delicate, with a really refined acidity and a buttery mouthfeel.

    The coffee from the Valdés family is stunning every year. They say practice makes perfect, so five generations of coffee farming ought to do it. The Cobán region is a unique climate within Guatemala, with lots of rainfall and low average temperatures, so the coffee cherries mature slowly.
